Ingredients

  • 400g lamb mince
  • 10 quail eggs
  • 1 pinch of salt
  • 1 pinch of cayenne pepper (optional)
  • 1 pinch of black pepper (optional)

Instructions

  1. Use cocktail sticks to prick the eggshells and release air bubbles.
  2. Place in boiling water for about 2 mins, then put in iced water. Peel the eggs when they’re cooked.
  3. Mix the lamb with salt, cayenne pepper, and black pepper. Cut it up into 40g portions.
  4. Put every portion on a flat surface (or in your palms) and form thin sheets.
  5. Carefully wrap each egg in the mixture and pack them. Make sure there isn’t any air pocket.
  6. Preheat a deep-fryer to 190°C.
