  • 400g lamb mince
  • 10 quail eggs
  • 1 pinch of salt
  • 1 pinch of cayenne pepper (optional)

Instructions

  1. Preheat a deep-fryer to 190°C (375°F).
  2. Preheated the oven at 180°C (355°F).
  3. Use cocktail sticks to pierce the eggshells and release air bubbles.
  4. Place the eggs in boiling water for about 2 minutes
  5. Put them in iced water when cooked and peel them.
  6. Mix the lamb with salt, cayenne pepper, and black pepper. Cut it up into 40g portions.
  7. Put every portion on a flat surface (or in your palms) and form thin sheets.
  8. Wrap each egg in the mixture and pack them. Make sure there isn’t any air pocket.
  9. Deep fry each egg roll in the preheated deep-fryer for about 3-4 minutes until they are golden brown.
  10. Transfer them to a baking tray and place in the preheated oven for 2 minutes to finish cooking.
  11. Let them cool slightly, slice them in half, and serve warm.
