Tips

  • To have lighter fat, choose a leaner cut and brush with rendered beef tallow before crisping.
  • To have extra smokiness, place a small, indirect wood chip pan underneath (without contact).
  • If you want thicker chiplets, cut slices ~1.5-2 mm, but it means more chew.
  • You can use mixed meats, like a few slices of pork belly, lamb, or duck fat, to see which ones you like better.

How to Make Crispy Beef Fat and Meat Lace Chips?

To make these Carnivore snacks or chips, you need a sharp knife or slicer, a baking rack, a baking sheet (or dehydrator tray), parchment paper or foil, and paper towels. Then, you just need the following ingredients and instructions.

Ingredients

  • 200 g beef (ribeye cap, flank steak, or other cuts with fat marbling)
  • 1 tsp fine sea salt
  • A pinch of smoked salt or ground black pepper (optional)

Instructions

  1. Preheat the oven to 200°F (95°C) or set the dehydrator to 150°F (65°C).
  2. Freeze the beef for 15 minutes to firm it up for easier slicing.
  3. Slice the beef across the grain as thinly as possible (1 mm or less).
  4. Lay beef slices on paper towels and pat both sides.
  5. Sprinkle salt (and smoked salt or pepper if using).
  6. Place a rack over a sheet pan. Lay the slices flat without overlap.
  7. Bake or dehydrate the slices for 1 hour.
  8. Check, then rotate or flip slices if needed.
  9. Continue for another 30-60 minutes until crispy but not burnt. (The exact time depends on thickness, fat content, and your oven.
  10. Remove the slices from the oven, leave the chips on the rack, and let them cool to get crispier.
  11. Enjoy or store in an airtight container.
  12. Keep in a cool, dry place. Use within 2-3 days at room temperature, or refrigerate for up to a week.
