Ingredients
- 1 oz. chicken breast or ground chicken
- 1 oz pork rind crumbs
- 1 oz. cheddar cheese
- 1/3 cup parmesan cheese
- 3 oz. cream cheese
- 2 tsp salt
Instructions
- Preheat the oven to 425°F (220°C).
- Blend chicken, cream cheese, cheddar cheese, and salt in a food processor. If you don't have a food processor, use pre-ground chicken and mix everything in a bowl.
- Mix pork rind crumbs and parmesan cheese in a separate bowl.
- Roll the chicken mixture into balls about the size of a ping pong ball.
- Coat each ball in the pork rind mixture.
- Place the coated balls on a greased pan or silicone pan and flatten them to about 1/2 inch thickness.
- Bake the patties for 12-15 minutes. Flip them over and bake for another 8-10 minutes or until golden brown.
